Shrimp and Andouille Sausage Omelette
A cajun spin on the traditional breakfast omelette. We take two of my favorites: shrimp and andouille sausage to create a Shrimp and Andouille Sausage Omelette.
Ingredients for Omelette
- 4 eggs (2 eggs per omelette)
- 1/4cup of chopped cooked andouille sausage
- 1/4 cup chopped cooked shrimp
- 1/4 cup of grilled chopped onions
- Cajun seasoning (half tsp per omelette)
- Cheese -optional
- Jalapeño peppers – optional
Directions for Omelette
- Whisk 2 eggs together and pour into a hot nonstick skillet
- Season with half tsp of seasoning
- Once eggs get really bubbly add in half of each of the fillings evenly on one half of the eggs
- Remember the other half needs to empty so you can flip it closed
- Once filled, closet the omelette, top with cheese, parsley and peppers and allow to finish cooking for 2-3 minutes until done (no liquid will Drip out of the sides
- Repeat process with the next two eggs and enjoy!!!
