As Cinco De Mayo was approaching, I was pondering about what I could share with you all. I remembered I have this really good guacamole recipe and what do people love more than anything in the New Orleans? Seafood! Not only is this simple for a dinner for two, you can also make this in a few moments for a large crowd.  This is a recipe for a Guacamole Poboy with Key Lime Grilled Shrimp.

A traditional poboy uses french bread and so does this recipe but you can also switch the bread out and use a wrap to make it into small appetizers. Also if you have a seafood allergy, you can replace this with chicken or beef.

Ingredients for Guacamole

  • 4 avocados mashed
  • 2 tomatoes chopped
  • 1 cup of white onion
  • Juice from half of a lime
  • 1/4 cup of cilantro
  • Salt and pepper to taste


Ingredients for the Key Lime Shrimp

  • 1 lb of Jumbo Shrimp peeled and deveined
  • 1 tsp of Slay ya Mama Cajun seasoning
  • Juice from half of a lime

Directions for the Guacamole

Mix all of ingredients together thoroughly.  Then salt and pepper to taste.  Set aside

Directions for the Key Lime Shrimp

Season shrimp with seasoning and lime.  On a medium high heat cook until shrimp are completely cooked.  Now it’s time to assemble the Poboy! Spread a generous amount of guacamole on one side of the bread, place shrimp on top of the guacamole and you’re done! I’m crazy about pico de gallo so I put a little extra on top of my sandwich that’s optional, serve with a festive drink and enjoy Cinco De Mayo!
