Shrimp and Andouille Sausage Omelette

Shrimp and Andouille Sausage Omelette

A cajun spin on the traditional breakfast omelette.  We take two of my favorites: shrimp and andouille sausage to create a Shrimp and Andouille Sausage Omelette.

Ingredients for Omelette

  • 4 eggs (2 eggs per omelette)
  • 1/4cup of chopped cooked  andouille sausage
  • 1/4 cup chopped cooked shrimp
  • 1/4 cup of grilled chopped onions
  • Cajun seasoning (half tsp per omelette)
  • Cheese -optional
  • Jalapeño peppers – optional

Directions for Omelette

  1. Whisk 2 eggs together and pour into a hot nonstick skillet
  2. Season with half tsp of seasoning
  3. Once eggs get really bubbly add in half of each of the fillings evenly on one half of the eggs
  4. Remember the other half needs to empty so you can flip it closed
  5. Once filled, closet the omelette, top with cheese, parsley and peppers and allow to finish cooking for 2-3 minutes until done (no liquid will Drip out of the sides
  6. Repeat process with the next two eggs and enjoy!!!
